Last time we promised you “white gold”. Here it is: the salt that cured Roman fish under our Old Town, the quiet pans on the edge of Lagos that the birds have taken over, and the hand-raked craft that still survives at the other end of the Algarve.

Salt Under the Cobbles: Roman Lagos
If you read our first post, you already know Lagos was a fish town long before the canneries. What we skipped over is the ingredient that made it possible. When archaeologists dug on Rua Silva Lopes, right in the middle of the Old Town, they uncovered a complex of fifteen tanks grouped around a central passage. It worked in two long phases, from the second half of the 1st century AD into the middle of the 6th century. More of these factories turned up on Rua 25 de Abril, a street you have almost certainly wandered along.
The method was simple and a little pungent. Fish and their entrails went into the tanks, salt was added, and the liquid that formed over a long soak was poured into amphorae made for the purpose and shipped to markets near and far. Archaeologist A. M. Arruda lists salt among the marine resources Roman Lagos lived on, right alongside the fish. In other words, salt was the silent partner in the town’s first great food business, more than a thousand years before anyone sealed a sardine in a tin.
A Salt Coast From Lagos to Castro Marim
A salt pan needs very little, but it needs it reliably: shallow sea water, clay that will not let it drain away, and long, bright, windy summers. The Algarve has all three. When the European Union set out what makes Tavira’s salt special, it pointed to exactly that mix of climate, impermeable clay soils and Atlantic water. In a survey of Portuguese salt works published by the University of Porto, Renato Neves described the Algarve’s pans as stretching “desde Lagos a Castro Marim”, from our town all the way along the coast to the far eastern Algarve.
The engineering is quietly brilliant. Sea water moves by gravity through a chain of basins, from cold water to warm water to the shallow crystallising pans, growing saltier as the sun and wind do the work. The salt workers, the marnotos, manage water levels and brine by eye and experience, and that judgement shapes the crystals as much as the weather does.
Why the Pans Went Quiet
The 20th century was hard on traditional salt. For most of history salt was how you kept food, and once refrigeration and modern industry took over that job, demand for salt as a preservative fell away. Across Portugal, many small pans were abandoned or converted to other uses. You can see the result right on our doorstep. The Ramsar information sheet for the Ria de Alvor, compiled by Portugal’s nature conservation institute, describes the estuary’s traditional salt pan complexes as largely abandoned, now sharing the lagoon with saltmarsh, mudflats and shellfish beds.
So we owe you a small correction. When we teased this post, we pictured salt being raked just up the road. The honest version is that the Lagos side of the story is mostly memory now, and the living tradition has moved east. We think that makes it worth telling properly.
Hand-Raked: How White Gold Is Made
In the salt pans of Tavira, inside the Ria Formosa Natural Park, salt is still harvested by hand, and in 2013 the EU registered Sal de Tavira and Flor de Sal de Tavira as a Protected Designation of Origin. The official product description traces the Tavira pans back to Crown records from 1266.
Two very different salts come out of the same pan. Coarse salt grows on the clay floor of the crystallising basin and is raked out by hand. Flor de sal is the delicate one: a crust of paper-thin flakes that forms on the surface and is skimmed off with a tool the salt workers call a lousse before it can sink. Neither is washed or refined. Next time you crumble a pinch of flor de sal over grilled fish, you are tasting someone’s careful afternoon of skimming.
See It Today
- Salinas de Odiáxere. The old salt pans sit about 5 km east of Lagos, near Odiáxere, and are now one of the best places in the municipality for watching waterbirds. The birding site Aves de Portugal suggests taking the small road south towards Vale da Lama from the eastern entrance of Odiáxere on the N125. The area is open to walk but can be muddy after heavy rain, so bring decent shoes and binoculars.
- The Ria de Alvor. The wider estuary is a Ramsar wetland and part of the EU’s Natura 2000 network, and the old pans are part of its landscape of saltmarsh and tidal flats.
- Rua Silva Lopes, Old Town. Nothing to buy a ticket for, but stand here for a moment: the Roman salting tanks were excavated beneath this street.
- The Tavira salt pans. For the living, hand-raked tradition, it is a day trip to the eastern Algarve and the Ria Formosa Natural Park.
Why It Matters at Octopus Oasis
Salt is the thread running through every layer we have written about so far. It cured the Roman catch under the cobbles, it kept fish edible long before anyone had a fridge, and it still finishes the plate when you sit down to dinner in town.
